A LETTER FROM DICKIE BRENNAN & CO.
Prior to COVID-19, we were quietly working on Dickie Brennan & Co.'s latest project - The Commissary. This project was different than all the others that led before it. It's a commercial kitchen in the Lower Garden District designed to serve multiple purposes - a central place to make the most delicious, consistent soups, stocks, desserts and more for our Dickie Brennan & Co. restaurants; a market to sell direct-to-guest house butchered Louisiana steaks, restaurant-quality Gulf seafood and dishes like turtle soup and bread pudding by the quart and pan; and an eatery to get a cocktail and slice of crabmeat cheesecake. But as they say, even "the best laid plans of mice and men often go awry."
The Commissary was set to open in April 2020, with the first phase of providing food to our restaurants, the next two phases were planned for late 2020. But immediately following the pandemic we asked ourselves, "How can The Commissary help during this time?" Its nearly 6000 square foot commercial kitchen provides ample space for culinary staff to work safely while maintaining an appropriate social distance.
Our first goal in this new, temporary world is to feed the community that feeds us. With donations from some very generous donors, we prepared 500 "Extended Family Meal" meals to give away once a week to our team members, and our extended community in need.
